Bang Bang Shrimp
1 ½ pounds medium shrimp, peeled and deveined, tails removed
¾ cup all-purpose flour
½ cup cornstarch
1 cup buttermilk
1 large egg
1 tablespoon hot sauce
1 cup Panko breadcrumbs
Salt and pepper
¼ cup mayonnaise
2 tablespoons sweet chili sauce
1 tablespoon honey
2 teaspoons hot sauce
Add the oil to your deep fryer until it is between the “Min” and “Max” marks in the bowl. Turn it on and set it to 375°F.
To make the sauce, whisk together all of the sauce ingredients and set aside.
To make the batter, combine the flour, cornstarch, buttermilk, egg and hot sauce in a large bowl and whisk to combine. Season with salt and pepper to taste.
To coat the shrimp, dip them into the batter and then dredge them into the Panko breadcrumbs, making sure to press the coating in.
Working in batches, add coated shrimp to the deep fryer for 2-3 minutes to cook until they are golden brown. Transfer them to a plate lined with paper towels to remove the excess oil.
Serve immediately with the sauce on the side or pour it over the shrimp.
